1) Fruit Cake Cookies
   

Ingredients
1 cup (250g) soft butter

1 cup brown sugar

2 eggs

3 drops vanilla essence

3 cups self-raising flour

1/4 teaspoon salt

1/4 cup hot water

2 tablespoons dark rum

3 cups mixed dried fruit

Glace cherries

 

Method
1. Cream the butter in a bowl and beat in sugar, eggs and vanilla (light and fluffy)

2. Mixed in flour, hot water, salt and rum.

3. Fold in dried fruit.

4. Drop by teaspoons on to greased oven tray.

5. Top each cookie with cherry.

6. Cook in hot oven for 10-12 mins. Pre heat 200 C.

7. Makes about 50.

  
2) Fresh Fruit Tartlets
  

Ingredients

1.5 cups plain flour

1/3 cup (85g) soft butter

2 tablespoons caster sugar

2 eggs yolks

1 tablespoon cold water

Apricot jam

Assortment of fresh fruit

2 tablespoons Kirsch

 

Method

1. Sift the flour and add butter, sugar and egg yolks.

2. Blend together and add water.

3. Wrap and chill for 1 hour.

4. Roll out dough, cut to fit tartlet pans.

5. Cook in hot oven for 10 mins. Preheat 150 C.

6. Remove tartlets from pans and brush with apricot jam.

7. Filled with fresh fruit and sprinkle Kirsch on it.
